CHICKEN AND BEET SALAD WITH APPLES, WALNUTS AND GOAT CHEESE
Apples, peaches and other tree fruits are excellent in salads. We love a salad that combines fresh green vegetables, fruit, nuts and cheese. This is one of our favorites with the addition of chicken and beets making for a meal. We love making this with leftover roasted chicken.
- 4 cups mixed baby greens
- 1 lb roasted chicken breast, cut into strips
- 1 cup beets, diced
- 1 apple, sliced
- ¼ cup pan toasted walnuts
- 2-3 oz goat cheese
- 4 Tbsp extra virgin olive oil
- 2 Tbsp lemon juice
- ½ tsp Dijon mustard
- ¼ tsp sea salt
- freshly ground black pepper to taste
Divide baby greens amongst four salad plates. Top with roasted chicken breast, beets, apple, walnuts and goat cheese. Mix together olive oil, lemon juice, mustard and salt to make a vinaigrette. Pour vinaigrette over salad and add freshly ground black pepper to taste.
