RUSTIC PEACH VANILLA BUTTER ON TOAST

These days, humble toast is embracing all kinds of delicious sweet and savory flavors. There are even toast restaurants! We think you’ll like our toast that is exciting, but still uses humble and basic ingredients. You’ll love this simple snack or breakfast at the height of the peach season. Use peaches at the perfect stage of ripeness.

• 4 Tbsp butter, at room temperature
• 1 peach, skin removed and finely chopped
• 1/8 tsp vanilla
• 4 pieces of thickly sliced crusty bread
• peach slices to garnish
• black pepper to taste
• mint or basil to garnish

Mix peach, vanilla and butter together thoroughly. Toast bread and generously slather with peach vanilla butter. Garnish with peach slices, grind pepper on top and add mint or basil to garnish.
