STRAWBERRY AND PEACH SPINACH PASTA
One thing we’ve learned is that fruit is not only great in sweet desserts. Combine your seasonal fruit with savory ingredients, even as main dishes. One of our favorites is this strawberry and peach spinach pasta. It’s a light repast for a warm summer day.
- 1 lb pasta
- 5 tbsp olive oil, divided
- 4 big handfuls of fresh spinach
- 1 tsp cumin
- 1/2 tsp roasted garlic powder
- 1 tsp Aleppo pepper (optional)
- salt and pepper to taste
- 1 pint strawberries, sliced
- 2 peaches, sliced
- 4 oz crumbled feta, or shredded white Mexican queso fresco
Cook pasta according to instructions. While pasta is cooking, saute spinach in one Tbsp of olive oil. In a big bowl, add the rest of the olive oil (more if preferred), cumin, roasted garlic powder, Aleppo pepper (optional) and salt and pepper to taste. After the pasta has cooked, add about 3/4 of the pasta to the bowl and mix thoroughly. Add spinach and mix throughout the pasta. Plate the pasta on four dishes and add strawberries and peaches on top. Sprinkle the cheese over the top. Grind a bit more pepper on top.
