PEACH QUESADILLA WITH QUESO FRESCA AND SPINACH
Fruit is a wonderful addition to many Mexican dishes. We like to use fruit to create a little twist on modern classics and add a little surprise to your taste buds. This peach quesadilla creates a perfect balance of flavors with the addition of salty queso freca and fresh spinach. We highly recommend this for dinner or as a wonderful appetizer for guests at your upcoming cookout. You can also prepare these using a grill pan on the stove, so you can enjoy them year round.
- 10 corn tortillas
- 8 oz queso fresco cheese, grated
- 2 fresh peaches, thinly sliced
- 2 handfuls of fresh spinach
- ground pepper, to taste
- extra virgin olive oil
Lay out 5 corn tortillas on a cutting board or large platter. Cover the five tortillas with 1/2 of the cheese and distribute the spinach evenly across the five tortillas. Layer on the fresh peaches and grind the pepper on top of the peaches. Layer the other 1/2 of the queso fresco on the tortillas. Place a tortilla on top of each of the 5 tortillas and brush olive oil onto the tortillas. Flip the tortillas onto a heated outdoor grill, oiled side down. Grill on medium for about 5 minutes. As you are grilling, brush the other side with olive oil. Flip and grill for about another 3 minutes.
Serves 3-4 for an appetizer
